Damn Fine Pie


This classic stove was an inspiration to cook with.Further inspired by Agent Dale Cooper's love of Cherry Pie (and our love of Twin Peaks, not to be confused w/ the classy Austin establishment), we created our own Vegan Cherry Pie.


A cherry-pitter comes in handy, watch out for those stains!




Cherry Pie for breakfast w/ black coffee and a dollop of coconut ice-kreme.
Our own Mango-Coconut Ice-Kreme! Bless that ice-kreme maker, a miracle-worker.

The Double R diner (circa 2000) in North Bend, Washington.Cherry Pie-
Crust:
1/3 c. white wheat flour
1 short stick of Earth Balance (or 1/2 cup)
3 Tbspn cold water
1/2 tspn salt

combine and roll out

Filling:
6 cups of cherries
1 tbspn cornstarch
1 c. sugar

Mix it up and refridge

Bake at 350 for about an hour or until the cherries bubble.

Mango Coconut Ice-Kreme-
2 cans lite coconut milk
3 limes
3 mangos
2 tbspn arrowroot powder
*reserve 1/4 c. coconut milk and mix w/ 2 tbspn arrowroot powder.

* heat the remaining milk, 2 mangos, and lime juice until boiling-add in arrowroot mixture, remove from heat, and refridgerate for one hour.

*save one mango for adding in later.
Then, depending on the laws of your ice-kreme maker-have at it!

you should edit the cornstarch thing. cherry pies with fresh cherries, while always superior to canned crap, are ALWAYS runny. i don't understand why. next time i make one of these babies i'll use more cornstarch, or tapioca, or a combination of both. maybe 2 Tblsp? 3?

i would also say the filling, made for a cobbler or crisp, would be fantastic, and maybe better suited for those desserts, since the cherries tend to get really moist. i've also been curious to try a pie with ranier cherries instead of bing, since they are more tart.
